St. Patrick's Day Dish for Baby

Some babies eat vegetables without much fuss.  However, many little ones seem hard-wired, from birth, to resist the greens.  Here's a tasty recipe to help you sneak some more nutrients into your babe's diet.  I threw this together a few nights ago and was surprised at how eager my 9 month old was to gobble it up.

1 apple - unpeeled
1/2 cup frozen spinach
1/2 cup coconut milk, breast milk or water

Core the apple and put it into the food processor along with the spinach and fluid.  Process until the mixture is free of any lumps and is the consistency of applesauce.  Store in a glass jar with a tight-fitting lid in the refrigerator for up to four days.

Spinach is a great source of vitamin K, calcium, vitamin A, vitamin C, folate, magnesium, and iron.  Apples are great for digestion and contain vitamin C.  Both are excellent foods to introduce to a baby, beginning at six months of age.

Make sure to have your camera ready to capture the perfect picture of your little one covered in green!

LOVE it! we do green smoothies with my older 3 kids and plan to do something similar with the new baby when he gets to solids... by the time my 6,5,and 3 year old have eaten breakfast, they've also had the equivalent of 2 cups of dark leafy greens (fresh spinach, kale, romaine, or collard greens) and at least 3-4 servings of fruit EACH! i hope that by drinking this myself while pregnant i can help "prewire" this baby for greens and veggies!

with summer coming we use more of the forzen fruit, the best place to buy that is at sams or costco... have fun!!!! :)
